An otherworldly pizza and the inadvertent discovery of a gift for cooking
This piece was supposed to be about a chef in a New Haven restaurant spotlighting a favorite dish which in this case was a butter chicken pizza.
It turned out to be so much more.
Briefly: A week after Bryan Burke got his drivers’ license, he took a job delivering pizzas. When he wasn’t delivering, he was washing dishes. One day, someone called out “Hey Bryan, we need you to make salads!” He learned that, and learned to make pizza dough, and how to stretch pizza, and on and on. The kitchen, he found, was “the ultimate refuge for misfits.” As for food, it was an endless source of fascination. Enjoy.
